How to make Banana Cinnamon Fritters

Method

  1. Make your batter first. Sift the flour into a bowl and add the sugar, salt and baking powder.
  2. In another bowl, whisk the egg with the milk, vanilla extract and butter.
  3. Gently beat the milk mixture into the dry ingredients.
  4. Mix the cinnamon and 2 tablespoons of the caster sugar into a small bowl, set this cinnamon sugar mixture aside, to dust over cooked fritters.
  5. Heat the oil, then peel the bananas and cut into quarters.
  6. Lightly coat the banana pieces in the extra flour, then dip in the batter.
  7. Gently drop into the hot oil and fry for 4-5  minutes until golden. Remove and drain on paper towel.
  8. Cook in batches, keeping the cooked ones warm while you cook the rest.
  9. Serve immediately, sprinkled with cinnamon sugar mixture.

Optional: Serve with lime wedges
