How to make Banana Cinnamon Fritters
Method
- Make your batter first. Sift the flour into a bowl and add the sugar, salt and baking powder.
- In another bowl, whisk the egg with the milk, vanilla extract and butter.
- Gently beat the milk mixture into the dry ingredients.
- Mix the cinnamon and 2 tablespoons of the caster sugar into a small bowl, set this cinnamon sugar mixture aside, to dust over cooked fritters.
- Heat the oil, then peel the bananas and cut into quarters.
- Lightly coat the banana pieces in the extra flour, then dip in the batter.
- Gently drop into the hot oil and fry for 4-5 minutes until golden. Remove and drain on paper towel.
- Cook in batches, keeping the cooked ones warm while you cook the rest.
- Serve immediately, sprinkled with cinnamon sugar mixture.
Optional: Serve with lime wedges
