How to make Banh Mi Pizza
Method
- Pickle the carrot first. Place carrot in a small bowl and add the sugar, vinegar and salt with 75ml water, stirring well to evenly mix. Set aside to pickle for at least 30 minutes.
- Preheat oven to 240°C (220°C fan-forced). Use 2 non-stick pizza trays or line baking trays with baking paper.
- Prepare the pizza dough according to packet instructions and place on trays. Brush with oil and bake for 10 minutes or until golden brown and cooked through.
- Cut off and discard the jellied top of the pâté . Spread pâté over the pizza base and top with the sliced pork.
- Squeeze the pickled carrot dry and scatter over the pork. Add the spring onion and cucumber on top. Drizzle with mayonnaise, chilli garlic sauce and soy sauce.
- Garnish with coriander leaves and chilli. Cut pizza into wedges and serve.
Tip: You can store pickled carrot for up to 2 weeks in a sealed jar in the fridge.
Optional: The cooked pork can be substituted with leftover roast chicken or beef slices.
