Barramundi with Soy Garlic and Ginger Pasta Recipe
How to make Barramundi with Soy Garlic and Ginger Pasta
Method
- Mix the soy sauce, garlic, ginger and brown sugar. Set aside.
- In a pot, bring 2 litres of salted water to boil and add half of the pasta. Stir gently and let pasta separate. Cook for 6-8 minutes, drain and set aside.
- In another pot, bring to boil 2 cups of water and add broccoli. Cook for 2 minutes, drain and set aside.
- In a non-stick pan on medium heat, place barramundi skin side down and cook for 6 minutes. Turn over and continue cooking for 4 minutes. Add 2 tablespoons of sauce mix to fry pan, heat until warm.
- To serve, toss remaining sauce, pasta and broccoli together. Place on plate and top with barramundi portions.
- Garnish with chilli, shallots and coriander sprigs.
Optional: To turn into a meal for 4 people, simply cook the whole pack of fettuccine, add an additional barramundi and double sauce the seasoning.
