How to make Brandy Mixed Fruit Brownies

Method

  1. Preheat oven to 180°C (160°C fan-forced). Line a slice tray or brownie tray with baking paper.
  2. Into a medium-sized saucepan on medium heat, combine fruit mince, sugar, juice, 2 tbsp butter, 60ml water and spices. Bring to the boil, stirring, and simmer gently for 10 minutes until sugar has dissolved and all the liquid has evaporated.
  3. Prepare brownie mix to packet directions.
  4. In the same mixing bowl, carefully add the fruit mixture and mix through. Pour into prepared baking pan and bake for approximately 30 minutes. Check brownie, as ovens may vary, and if needed, cook for a further 5 minutes.
  5. Cool in pan for 20 minutes. Carefully place onto a baking rack to cool completely, before slicing.
  6. Serve as they are, or you can decorate with icing, for a special Christmas touch.

Tip: Store in an airtight container, if there are any left!
