How to Make Chicken, Tomato and Corn Fritters Recipe
Method
- Combine flour, cornflour and baking powder in a large mixing bowl. Combine egg and buttermilk in another bowl.
- Fold egg mixture into flour mixture. Fold in diced chicken, tomatoes, cheese, spring onions and corn. Season with salt and pepper.
- Heat a tablespoon of oil in a medium-sized, non-stick frying pan on high heat.
- Add ¼ cup of fritter mixture to the pan and fry each side until golden brown. Depending on size of pan, add 3 or 4 serves at a time to cook. Remove from pan when cooked and golden and repeat to cook 12 fritters.
- Serve with halved tomatoes and basil leaves.
Optional: Serve with your favourite salsa.
Tip: Can be stored in an airtight container in the fridge for 2 days.
