How to make Cottage Pie with Sweet Potato Mash
Method
- Prepare the sweet potato mash. Peel and chop potatoes and sweet potato. Place in a pot with salt water and boil until tender – about 15-20 minutes. Drain and return to the pot.
- Add butter and milk, then season with salt and pepper. Mash until smooth and set aside.
- Make the filling. In a large frypan, heat the olive oil over medium heat. Add the diced onion, celery and carrots, cooking until softened. Stir in the garlic and cook for about 30 seconds.
- Add the beef mince and cook until browned – about 6-8 minutes.
- Stir in the tomato paste, worcestershire sauce, crushed tomatoes and stock powder. Bring to a simmer and let it cook for about 10 minutes, until slightly thickened.
- Mix in the frozen peas and season with salt and pepper to taste.
- Assemble the pie. Preheat your oven to 180°C (160°C fan-forced).
- Spread the meat filling evenly into a baking dish. Top with the sweet potato mash, spreading it evenly to cover the meat. Use a fork to create texture.
- Slice the tomatoes and place on top of the sweet potato mash.
- Bake for about 25-30 minutes, until the top is golden.
