How to make a Ginger Zinger Drink
Method
- Make the granitas first. Pour the coconut milk into a shallow baking tray and set aside.
- Blend the mango and lime in a blender until puréed. Spread the mango purée onto a separate shallow baking tray. Set aside.
- Make the simple syrup next. In a small saucepan on high heat bring ½ cup water to a boil and add ½ cup sugar. Boil for 1 minute and then remove from heat and stir until the sugar has dissolved.
- Let it cool slightly and then pour half of the syrup over the coconut milk and stir until well combined.
- Place the tray with the coconut milk in the freezer, for 2 hours, or until set.
- Pour the reserved syrup over the mango and stir until well combined. Place the tray in the freezer, for 2 hours or until set.
- Remove the trays from the freezer. Using 2 forks, rake the top of each to create a fine, crumbly-textured granita. Place the trays back in the freezer and make the smoothie.
- Add the carrots, apple and almond milk to a blender. Blend well at high speed, until the carrots and apple have broken down. Add the bananas, diced mango, ginger, cinnamon, nutmeg (if using) and ½ cup ice and blend until smooth.
- Fill 2 chilled glasses ¾ of the way with the smoothie.
- Top each with a few spoonfuls of mango granita, then top that with a few spoonfuls of coconut granita. Serve immediately.
Tip: If you freeze the bananas and mango ahead of time, you can omit the ice.
Optional: Add ½ cup Greek yogurt for more protein.
