How to Make Beetroot Hommus with Roasted Cauliflower

Method

  1. Preheat oven to 200°C (180°C fan forced). Toss cauliflower with curry powder and oil. Season. Place on an oven tray and bake, turning occasionally, for 25 minutes or until golden and tender. Cool slightly.
  2. Meanwhile, process beetroot until chopped. Add hommus and process until combined and smooth. Season.
  3. Serve cauliflower with hommus.
