How to Make Mixed Berry and Halloumi Breakfast Salad

Method

  1. Slice halloumi. Heat a small frying pan over medium heat and add a splash of olive oil. Cook halloumi until golden brown on both sides. Once cool to touch, tear into bite-sized pieces and add to the salad bowl.
  2. Wash berries, salad and spinach then dry. Add to salad bowl.
  3. In a small bowl, whisk together the olive oil, vinegar, honey and a pinch of salt.
  4. Pour dressing over salad and toss to combine. Serve topped with sunflower seeds and pepitas.
