The great potato migration.

A lot of ALDI’s fresh, potatoes migrate from SA regions like Mallee and the Adelaide Plains. ALDI also source from farmers in WA. Buying from different Aussie potato farmers allows us to sell this family favourite year round at ALDI prices.

Deep in South Australia’s Mallee Region, you’ll find Zerella Fresh - a family business with over 88 years of experience. They’ve been supplying us a whopping 170 tonnes of potatoes per week. They’re also the local legend behind the low-carb Spud Lite potatoes, a potato that offers 25% less carbs than the average potato, helping squash the high carb potato myth and change consumers’ minds.

How to pick the perfect potato?

Potatoes should be firm without any soft patches and, depending on the variety, they should have white or creamy coloured flesh.

Storing your spuds.

Store your potatoes in a cool, dry place – out of sunlight. If left for a while, your potatoes may sprout. This is totally normal and they are still safe to eat if you remove these sprouts.

Can you freeze fresh potatoes?

Yes, but there’s a but! Because of their high water content, freezing potatoes from fresh can result in grainy and mushy potatoes when thawed. For the best results, chop up and then blanch your potatoes for 10 minutes or so. Then, drain excess water from the potatoes in a colander. Once drained, store your potatoes in an airtight bag or container. You can use your frozen potatoes for mash, in curries, soups and other wet dishes.  

What are the best potatoes to cook for chips?

All potatoes are great for chips, but typically the more floury varieties are recommended. Floury potatoes are more absorbent and thus become fluffier on the inside once cooked. Floury potato varieties include Desiree, Estima, King Edward, Maris Piper, Rosamunda, Early Puritan, Evergood, Linzer, Melody, Blue Congo, Porvita and Red Baron. If you’re looking for a healthier chip alternative, oven baking ALDI’s Spud Lite Potatoes with a dash of olive oil, salt and herbs is a delicious and crowd-pleasing option.
