How to Make Kiwi Fruit and Coconut Muffins
Method
- Preheat oven to 220°C (200°C fan-forced).
- Prepare 12 x ½ cup muffin tins with muffin liners or cooking spray.
- In a large bowl sift flour, baking powder, bicarbonate of soda and sugar. Mix to combine.
- In another bowl combine mashed banana, olive oil, melted butter, buttermilk, vanilla and eggs.
- Add to the flour mixture and stir until just combined.
- Spoon into prepared tins and top with kiwi fruit slice. Sprinkle with shredded coconut.
- Bake for 5 minutes. Reduce oven heat to 200° (180°C fan-forced) and cook for another 12-15 minutes or until golden, risen and a toothpick inserted near the centre comes out clean.
- Cool on baking rack and serve.
Tip: Can be stored in an airtight container. Great lunch box snack.
