How to Make Kiwi Fruit and Coconut Muffins

Method

  1. Preheat oven to 220°C (200°C fan-forced).
  2. Prepare 12 x ½ cup muffin tins with muffin liners or cooking spray.
  3. In a large bowl sift flour, baking powder, bicarbonate of soda and sugar. Mix to combine.
  4. In another bowl combine mashed banana, olive oil, melted butter, buttermilk, vanilla and eggs.
  5. Add to the flour mixture and stir until just combined.
  6. Spoon into prepared tins and top with kiwi fruit slice. Sprinkle with shredded coconut.
  7. Bake for 5 minutes. Reduce oven heat to 200° (180°C fan-forced) and cook for another 12-15 minutes or until golden, risen and a toothpick inserted near the centre comes out clean.
  8. Cool on baking rack and serve.

Tip: Can be stored in an airtight container. Great lunch box snack.
