How to Make Mediterranean Tuna Salad
Method
- Wash the eggs and place them in a small saucepan of room temperature water and bring to the boil. Cook for 10 minutes, adding the green beans for the last 2 minutes of cooking. Drain and refresh eggs and beans in cold water. Remove shell from the eggs and halve. Reserve.
- Meanwhile, place the onion in a small bowl and cover with vinegar. Leave to stand for 5 minutes then drain.
- For the dressing, place the oil, apple cider vinegar, mustard and sugar in a bowl. Season with salt and black pepper. Whisk together until well combined.
- Thickly slice the lettuce and place in 2 wide serving bowls. Top with the egg, celery, green beans, tomatoes, chick peas, olives, tuna and pickled red onion.
- Drizzle with the dressing and serve.
Optional: *You can use Remano white wine vinegar instead of plain white vinegar, to pickle and soften the sliced onions.
