Tanghulu Grapes
How to make Tanghulu Grapes

Prep Time: 10 minutes        |        Cook Time:  7 minutes        |        Serves:  9 skewers

Ingredients

  • 45 individual grapes (red and/or white)
  • 300g White Mill caster sugar
  • 250ml water
  • 2 cups of ice cubes  

Method

  1. Wash the grapes and dry thoroughly. Thread 9 skewers with 5 grapes each.
  2. Place sugar and 250ml of water into a small to medium-sized saucepan over a high heat (saucepan needs to allow the skewer to dip in and coat the grapes). Do not stir. Using a sugar thermometer bring the mixture to 135°C-140°C. This takes approximately 7 minutes.
  3. Meanwhile, fill a wide bowl with ice and water then set aside.  
  4. Take sugar syrup off the heat and working quickly, gently dip the skewers into sugar syrup, making sure grapes are completely coated. Use a spoon to pour the syrup over the grapes if easier. Shake to drip dry then place into the iced water to chill completely.  
  5. Remove from the iced water and serve.

Tip: The grapes must be as dry as possible before starting. Moisture on the grapes will stop the sugar from coating. Coat the grapes quickly so the sugar doesn’t harden.

Optional: Try strawberries, blueberries, kiwi fruit wedges or mandarin segments, instead of grapes.
