How to make Mexican Rice Salad
Method
- Cook the microwaveable rice, according to packet instructions. Let cool slightly. Add to bowl and fluff rice with a fork.
- Allow to cool completely.
- Add the tuna to the rice. Add black beans, chopped tomato, onion and coriander.
- Add the olive oil and lime juice.
- Season with salt and pepper to taste, then mix well.
- Serve with lime wedges.
*Optional: You can use brown rice and quinoa mix or black rice and cous cous also. You can also add finely diced mixed capsicum to the salad.
Tip: Serve with corn chips, stuffed inside mini capsicum cups or on their own.
