How to make Mexican Rice Salad

Method

  1. Cook the microwaveable rice, according to packet instructions. Let cool slightly. Add to bowl and fluff rice with a fork.
  2. Allow to cool completely.
  3. Add the tuna to the rice. Add black beans, chopped tomato, onion and coriander.
  4. Add the olive oil and lime juice.
  5. Season with salt and pepper to taste, then mix well.
  6. Serve with lime wedges.

*Optional: You can use brown rice and quinoa mix or black rice and cous cous also. You can also add finely diced mixed capsicum to the salad.

Tip: Serve with corn chips, stuffed inside mini capsicum cups or on their own.
