How to make Potato and Cheese Patties

Method

  1. Place chilled mashed potato in a mixing bowl. Add grated cheese, flour, parsley, shallots and combine. Taste and season with salt and pepper, as desire and mix through. Do not over mix. 
  2. Form into small patties and place in fridge for 15 minutes. 
  3. In a medium-sized frypan, heat oil over medium heat and pan-fry in batches. Cook for 4-5 minutes each side, or until golden brown with a slightly crunchy outer. 
  4. Serve warm with beaten sour cream. 

Tip: This recipe is a great way to use up leftover mashed potato. We used The Good Stuff washed red potatoes. Cooked, cooled and made the day before. 

Optional: Can be eaten cold or hot and added to lunchboxes. Also goes well with sweet chilli sauce and sour cream.
