How to make Potato and Cheese Patties
Method
- Place chilled mashed potato in a mixing bowl. Add grated cheese, flour, parsley, shallots and combine. Taste and season with salt and pepper, as desire and mix through. Do not over mix.
- Form into small patties and place in fridge for 15 minutes.
- In a medium-sized frypan, heat oil over medium heat and pan-fry in batches. Cook for 4-5 minutes each side, or until golden brown with a slightly crunchy outer.
- Serve warm with beaten sour cream.
Tip: This recipe is a great way to use up leftover mashed potato. We used The Good Stuff washed red potatoes. Cooked, cooled and made the day before.
Optional: Can be eaten cold or hot and added to lunchboxes. Also goes well with sweet chilli sauce and sour cream.
