How to make Veggie Fried Rice

Method

  1. Heat 1 tablespoon vegetable oil in a wok or frypan, over high heat. 
  2. Add the cooked rice, tossing and stirring, for 5 minutes until rice is toasted and pale brown. 
  3. Press the rice up the sides of the frypan or wok, leaving a hole in the middle. 
  4. Add ½ tablespoon oil to the space in the middle. Add onion, carrot, spring onion and garlic, stirring for 1 minute, until lightly softened. Stir with rice to combine. 
  5. Add soy sauce and sesame oil (if using) and toss to coat mixture. Add chicken stock and stir in. Season to taste with salt and white pepper.
  6. Push rice mixture to side of wok and add remaining ½ tablespoon oil, to other side. Break egg into the oil and season with a little salt. Use a spatula to scramble the egg, breaking it up into small bits. 
  7. Toss egg and rice mixture together.
  8. Add frozen peas to rice mixture and stir until peas are thawed and every grain of rice is separate. Serve immediately.

Optional: Swap out cooking the rice for a pouch of Imperial Grain microwaveable white, jasmine or brown rice. Cook to packet directions, fluff and cool down before use.
