How to make Baked Eggs Shakshuka
Method
- Heat oil in heavy-based frypan over medium-high heat. Add onion, garlic and chilli and cook for 2-3 minutes or until the onion becomes soft and translucent.
- Dice capsicum and add to pan, cook for a further 2 minutes.
- Stir through spices – cumin, paprika and chilli (if using) and combine well.
- Reduce heat and add tinned tomatoes and tomato paste. Simmer for 15 minutes, until the sauce becomes thick.
- Make small wells in the sauce and add the eggs into each well. Cover the pan and cook for 6-8 minutes or until eggs are cooked to your liking.
- Garnish shakshuka with parsley before serving.
