How to make Breakfast Rosti with Smoked Salmon

Method

  1. Peel and grate the potatoes. Put into a bowl, season with salt and black pepper and leave for at least 5 minutes.
  2. Add chopped chives and mix with fork. Then squeeze out as much moisture from potatoes as possible and divide the mixture into 4.
  3. Heat oil in frypan on medium to high heat. Make shredded potato mixture into circles (about 10cm) and slightly flatten to approximately 1cm thick.
  4. Fry potato rosti in oil until crisp on both sides. Drain on paper towel for a minute before serving on a warmed plate.
  5. Serve topped with the rocket leaves, smoked salmon and a dollop of whisked sour cream. Add wedge of lemon to each plate. Top with cracked pepper and serve immediately.
