Method
- Cut the avocados in half and remove stone. Scoop out flesh and add to a small bowl. Add lemon juice and mash roughly with a fork.
- Mash the peas with a fork and add to the avocado. Season with the paprika and some salt and pepper. Then drizzle over the olive oil and mix well.
- Poach the eggs to your liking. Toast the bread.
- Divide the avocado and peas between the slices of toast and top with a poached egg.
- Crumble the fetta cheese over the top, add cracked pepper and serve immediately.
