How to Make Maple Bacon Waffle Quiche
Method
- Preheat oven 180°C (or 160°C fan-forced).
- Finely chop the bacon. Heat a frypan and add bacon, cook on medium - high heat until bacon is crispy. Drizzle in a tablespoon of maple syrup, ensuring all the bacon is coated and cook for 30 seconds. Remove from pan and cool.
- Beat eggs and season with a little bit of salt and pepper. Remove a few leaves of thyme from the sprigs and mix into eggs. Add half of the maple bacon to the egg mixture and combine. Mix well and set aside.
- Warm the waffles slightly in oven or microwave, to soften. Lightly grease an 8-hole muffin tray.
- Gently push the waffles into the muffin holes. Fill with mixture and add to oven. Bake for approximately 8 minutes.
- While wafflles are baking, coat bacon in maple syrup and fry in a frypan, on medium heat, until cooked through and slightly crispy. Set aside.
- Remove waffle quiches from muffin tray and top with remaining crispy bacon pieces. Drizzle with maple syrup and garnish with thyme sprigs. Serve immediately.
