How to make Savoury Potato Pancakes
Method
- Peel and grate the potatoes. Add to a large bowl.
- Peel and mince the garlic, then peel and finely chop the onion and add to bowl.
- Mix the potatoes, onion and garlic together with a large fork.
- Heat the milk until just boiling, then pour over the potato mixture. Mix well, then season with salt, pepper and oregano.
- In another bowl, whisk the egg and add sifted flour. Add wet ingredients to dry and bring together. Divide the mixture into 4.
- Heat a little oil in a frypan on medium-high heat. Add one portion to pan and flatten into a 20cm circle. Fry each side for 3-5 minutes.
- Keep warm while you cook the rest.
Tip: Serve with your favourite sauce or chutney, or enjoy as it is, lightly seasoned with salt and black pepper.
