How to make Brandy Snap Vanilla Cannoli

Method

  1. In a medium-sized bowl, whip chilled cream and icing mixture, on high speed using a hand mixer for 1 minute.
  2. Add mascarpone, vanilla, lemon spritz and continue to beat for 1 minute. Using a round nozzle on a piping bag, fill with cream mixture. Allow cream to firm in the fridge in piping bag. 
  3. Shell pistachios and roughly chop and set a side in a small bowl. 
  4. Lay a 30cm x 30cm sheet of greaseproof paper onto bench. 
  5. Break chocolate into small pieces into a microwave-safe bowl. Microwave for 10 seconds and stir until all melted. Dip one end of the brandy snap into the melted chocolate and then into the crushed pistachio. Allow the chocolate and pistachio to cool and set. 
  6. When you're ready to serve, pipe each brandy snap with cream mixture.
  7. You can decorate with extra piped cream on the side, then serve immediately.  

Optional: *You can substitute with limoncello.
