Vanilla Santa Cake Recipe

Method

  1. Bake 2 vanilla cakes following pack instructions. Let cool. 
  2. To make buttercream, use an electric mixer and beat the butter until smooth. Add sifted icing mixture and vanilla extract. Beat buttercream until it is thick and smooth. 
  3. Carefully slice the top off 1 cake, to make cake level and flat. Spread buttercream over top of that cake, using a spatula to smooth out. 
  4. Then place second cake on top of first cake and cover with buttercream on top and sides of both cakes. 
  5. Wash strawberries and cut leaves off. Slice top of strawberries, to use for Santa’s hat and the bottom part for his tummy. Set strawberries aside on paper towel. Follow the directions on the packet to make the icing mixture and set aside.
  6. Fill a piping bag with the packet icing mixture, then pipe a small amount of this on strawberries, used for Santa's tummy. Place marshmallow on top of icing and pipe a small amount of buttercream on top of marshmallow, to place top of strawberries as Santa’s hat. Finish with a little piping of icing on the top of the hat. 
  7. Place your Santas on top of iced cake. Sprinkle with desiccated coconut and assorted sprinkles. 
  8. Using tweezers and a small dot of buttercream, place sprinkles and decorations onto Santa’s tummy, for his buttons. 
  9. Melt chocolate in microwave, until just melted. Dab the chocolate on the marshmallows to create Santa’s eyes.
  10. Keep refrigerated until ready to serve.
