How to make Leftover Yorkshire Pudding Sandwiches
Method
- Preheat the oven to 220°C (180°C fan-forced).
- Put the flour in a large bowl and season with salt and pepper, mixing well.
- Make a well in the middle of the flour.
- In a jug, crack the eggs and add the milk and whisk well.
- Pour this into the well in the flour and, with a wooden spoon, gradually mix until you have a smooth batter.
- Put a teaspoon of oil into each hole of a 12-hole muffin tin. Put into the oven to heat the oil.
- Once heated, divide the mixture between the holes and bake in the oven for 20-25 minutes until golden, risen and crisp.
- Allow to cool and prepare your leftovers as various filling combinations.
- Assemble the Yorkshire pudding sandwiches with your favourite fillings and enjoy!
