How to Make Beetroot Hommus with Roasted Cauliflower
Method
- Preheat oven to 200°C (180°C fan forced). Toss cauliflower with curry powder and oil. Season. Place on an oven tray and bake, turning occasionally, for 25 minutes or until golden and tender. Cool slightly.
- Meanwhile, process beetroot until chopped. Add hommus and process until combined and smooth. Season.
- Serve cauliflower with hommus.
