How to make a Cheese and Pesto Christmas Bauble
Method
1. Combine the cream cheese, fetta and grana padano in a food processor. Blend until combined and smooth. Place into a mixing bowl.
2. With damp hands, roll the mixture into a ball ensuring it is smooth and round. Wrap in cling film and twist ends to keep the shape. Refrigerate for 20 minutes.
3. Remove from fridge and unwrap. Place on plate. Using a knife, spread a line of pesto around the top – about a ⅓ of the way down. Repeat this again towards the bottom of the ball.
4. Top with a decorative bauble ring as desired. Place in fridge until ready to serve.
5. Serve with your favourite crackers or melba toast.

Optional: *You can swap out the fetta cheese for goat’s cheese, for an even sharper and extra rich flavour. Use 2 x 110g Emporium Selection goat’s cheese
Tip: You can also use a semi-sphere silicone mould, instead of hand-rolling. These are usually available at craft stores, kitchenware shops or online.
