How to make Chorizo Pigs in Blankets

Method

  1. Preheat the oven to 200°C (180°C fan-forced).
  2. Cut the chorizo into 10 pieces.
  3. With the back of your knife, stretch out the bacon rashers and cut in half.
  4. Wrap a bacon rasher around each piece of chorizo and secure with a cocktail stick.
  5. Bake in the oven for 25 minutes.
  6. Meanwhile, mix the mustard, tomato paste, soy sauce and mayonnaise together, to make a dipping sauce.
  7. Add the pigs in blankets to a serving plate, alongside the dipping sauce. Garnish with thyme leaves (if using).
