How to make Coconut Roasted Parsnips with Walnuts
Method
- Preheat the oven to 200°C (180°C fan-forced).
- Peel the parsnips. Cut in half lengthways then cut each half into thirds lengthways.
- Peel and mince the garlic.
- Toss the parsnips with the coconut oil and the garlic in a bowl – season with salt and pepper.
- Roast in the oven for 20 minutes, turning once during the cooking, then sprinkle over the chopped walnuts.
- Roast for a further 5 minutes.
Serve sprinkled with the chopped parsley.
