How to make Coconut Roasted Parsnips with Walnuts

Method

  1. Preheat the oven to 200°C (180°C fan-forced).
  2. Peel the parsnips. Cut in half lengthways then cut each half into thirds lengthways.
  3. Peel and mince the garlic.
  4. Toss the parsnips with the coconut oil and the garlic in a bowl – season with salt and pepper.
  5. Roast in the oven for 20 minutes, turning once during the cooking, then sprinkle over the chopped walnuts.
  6. Roast for a further 5 minutes.

Serve sprinkled with the chopped parsley.
