How to make Fig and Almond Stuffing Balls
Method
- Preheat the oven to 180°C (160°C fan-forced).
- Peel and finely chop the red onion. Peel and mince the garlic.
- In a large frying pan, sauté the onion and garlic in the olive oil for 5 minutes on a low heat until softened. Finely chop the figs. Finely chop the herbs.
- In a mixing bowl add the breadcrumbs, almond meal, freshly chopped herbs, figs, orange juice, onion and garlic and mix well.
- Roll into balls and place into baking dish and cook for 30 minutes. You can also spread mixture into a baking tray and cut into slices when cooked.
Tip: Stuffing Balls mixture can be made the day ahead and stored in the fridge.
*Optional: If using dried figs, then remove stalks and chop very finely. You will need to add a little more moisture to the mixture.
