How to make Fig and Almond Stuffing Balls

Method

  1. Preheat the oven to 180°C (160°C fan-forced).
  2. Peel and finely chop the red onion. Peel and mince the garlic.
  3. In a large frying pan, sauté the onion and garlic in the olive oil for 5 minutes on a low heat until softened. Finely chop the figs. Finely chop the herbs.
  4. In a mixing bowl add the breadcrumbs, almond meal, freshly chopped herbs, figs, orange juice, onion and garlic and mix well.
  5. Roll into balls and place into baking dish and cook for 30 minutes. You can also spread mixture into a baking tray and cut into slices when cooked.

Tip: Stuffing Balls mixture can be made the day ahead and stored in the fridge.

*Optional: If using dried figs, then remove stalks and chop very finely. You will need to add a little more moisture to the mixture.
