How to make Pineapple in Blankets

Method

  1. Bake in the oven for 20 minutes. Garnish with cracked black pepper and serve immediately.
  2. Wrap a rasher of bacon around each piece of pineapple, then place on a baking sheet and drizzle with honey.
  3. Preheat the oven to 200°C (180°C fan-forced).
  4. You can use a small knife to cut off the remaining eyes, before you start cutting. Slice pineapple into 8 wedges.
  5. Once rested, cut the other end off the pineapple. Remove the skin by carefully slicing it away, following the shape of the pineapple and removing as much of the pineapple’s “eyes” as possible.
  6. Cut the top off the pineapple and turn upside down, placing it on a cutting board and rest for 10-15 minutes. This will allow gravity to start moving the juices down, for evenly juiced slices (as they are generally stored topside up).
