How to make Potato Rosti with Smoked Salmon

Method

  1. In a large saucepan filled with salted water, add potatoes and bring to a boil, then reduce and simmer until just cooked. Drain water and set potatoes aside to cool enough to be able to handle. 
  2. Grate potatoes in a large bowl, add butter, garlic powder, onion powder and season with salt and pepper. Mix until combined. Check seasoning and adjust accordingly. 
  3. Scoop out ½ cup of mixture and shape into a round patty shape. Repeat with the remainder of the mixture. Place on a lined tray and chill in fridge, to set, for 30 minutes or overnight.
  4. Set air fryer on 200°C and line the tray. Place patties in and cook for 15 minutes or until crisp.
  5. On a serving platter arrange rostis and top with a small dollop of goat’s cheese, smoked salmon, dill and caviar or capers.
