How to make Prosciutto, Red Onion and Herb Stuffing

Method

  1. Preheat the oven to 200°C (180°C fan-forced).
  2. Chop the red onions and fry them in the butter, once they start cooking add in the prosciutto. Cook on a low heat until the onion is softened.
  3. Tear bread, place into a food processor and pulse until it crumbs.
  4. Chop the herbs finely and add the seed mix, breadcrumbs and parmesan cheese (is using).
  5. Add this mixture to the onion and prosciutto.
  6. Zest the lemon and add to the stuffing mix, along with the juice. Season with some black pepper and a little salt (if needed).
  7. Finally, whisk the egg and add to the mix. Combine.
  8. Put into an ovenproof dish and bake in the oven for 15 minutes.
  9. Serve with your favourite roast dinner.
