How to make Vegan Pigs in Blankets
Method
- Wash and dry eggplant and cut 6 very thin slices, lengthways. Place on paper towel.
- Preheat the oven to 200°C (180°C fan-forced).
- In an oiled griddle pan, fry eggplant slices on both sides. Then wrap 1 slice around each sausage.
- Bake on a baking tray in the oven for 20 minutes.
- In the meantime, mix the hommus, olive oil and lemon juice together. Season with some pepper.
- To serve, place hommus dip in small serving sauce bowl and add vegan pigs in blankets alongside. Scatter with pomegranate seeds.
Option: Scatter a few thyme leaves as garnish, to serve.
