How to make Vegan Pigs in Blankets

Method

  1. Wash and dry eggplant and cut 6 very thin slices, lengthways. Place on paper towel.
  2. Preheat the oven to 200°C (180°C fan-forced).
  3. In an oiled griddle pan, fry eggplant slices on both sides. Then wrap 1 slice around each sausage.
  4. Bake on a baking tray in the oven for 20 minutes.
  5. In the meantime, mix the hommus, olive oil and lemon juice together. Season with some pepper.
  6. To serve, place hommus dip in small serving sauce bowl and add vegan pigs in blankets alongside. Scatter with pomegranate seeds.

Option: Scatter a few thyme leaves as garnish, to serve.
