How to make Blueberry French Toast Bake
Method
- Preheat oven to 180°C (160°C fan-forced). Spray a large (approx. 8 cup/2 litre capacity), ovenproof dish with oil.
- Cut the bread into 3cm cubes and place in a large bowl.
- In another bowl, whisk together the eggs, sugar, cinnamon and vanilla until smooth.
- Place ½ the blueberries in a shallow bowl and crush using a potato masher or fork. Stir into egg mixture.
- Add the bread cubes to blueberries and eggs and toss gently until fully soaked with the mixture.
- Spoon into the prepared baking dish and scatter over the remaining blueberries. Cook for 50 minutes to 1 hour or until the egg mixture has cooked and the bread cubes are golden.
- Serve drizzled with maple syrup or honey.
Optional: Serve on a platter and lightly dust with Merryfield icing mixture and serve immediately.
Tip: Accompany with natural yogurt or cream.
