How to make Carrot Cake Oatmeal Cookies
Method
- In a medium-sized bowl, whisk together the oats, flour, baking powder, cinnamon, nutmeg, ground ginger and salt.
- In a separate bowl, whisk together the butter, egg and vanilla. Stir in the maple syrup and honey until thoroughly combined.
- Combine the wet mixture with the flour mixture, stirring just until incorporated. Fold the carrots through. Cover and chill the dough for at least 30 minutes.
- Preheat the oven to 180°C (160°C fan-forced). Line a baking sheet with baking paper.
- Drop the cookie dough into 14 rounded scoops onto the baking sheet. Flatten slightly using a spatula. Bake for 12-15 minutes.
- Cool on the baking sheet for at least 15 minutes before turning out onto a wire rack.
Note: Once cooled, can be stored in an airtight container.
