How to make Mango Bingsu

Method

  1. Start with making your shaved mango ice. In a blender, combine frozen mango, milk, water and sweetened condensed milk. Blend until smooth.
  2. Pour the mango bingsu mixture into small ice cube trays and freeze until solid.
  3. Once mango mixture is frozen, blend the cubes and pulse until they break up into small pieces and looks crumbly. Blend small amounts at a time to avoid turning slushy. Keep the mango bingsu in the freezer.
  4. *Make the mango sauce. In a bowl, mix 1 cup of diced mango, 3 tablespoons of caster sugar and the juice of 1 lime. Stir until the sugar dissolves and the mixture is well combined.
  5. Now make the mango whipped cream. Whisk together icing mixture and cream, until soft peaks form. Fold in 2 tablespoons of the mango sauce.
  6. To serve, scoop the shaved mango ice into chilled serving bowls. Top with cubed mango and mango whipped cream, then drizzle with mango sauce. Serve immediately and enjoy.
