How to make Papaya with Chilli Caramel
Method:
- To make the chilli caramel syrup, place the sugar and chilli into a small saucepan with 125ml water and set over a medium-high heat. Stir until dissolved then simmer for 8 minutes or until slightly thickened.
- Set aside to cool. Remove the cooked chilli and discard. Stir in the salt and add lime juice to taste.
- Peel the papaya with a knife or swivel peeler and cut in half. Scoop out the seeds and cut the flesh into slices or wedges.
- Place papaya onto a platter and drizzle generously with the syrup. Top with chopped red chilli (if using) and serve.
Tip: You can use this chilli caramel syrup over other tropical fruit, including mango or pineapple.
Optional: This dish can be enjoyed on its own or try with vanilla or coconut ice cream.
