How to make Papaya with Chilli Caramel

Method:

  1. To make the chilli caramel syrup, place the sugar and chilli into a small saucepan with 125ml water and set over a medium-high heat. Stir until dissolved then simmer for 8 minutes or until slightly thickened.
  2. Set aside to cool. Remove the cooked chilli and discard. Stir in the salt and add lime juice to taste. 
  3. Peel the papaya with a knife or swivel peeler and cut in half. Scoop out the seeds and cut the flesh into slices or wedges.
  4. Place papaya onto a platter and drizzle generously with the syrup. Top with chopped red chilli (if using) and serve.

Tip: You can use this chilli caramel syrup over other tropical fruit, including mango or pineapple. 
Optional: This dish can be enjoyed on its own or try with vanilla or coconut ice cream.
