How to make Passionfruit Cheesecake Cups
Method
- To get the passionfruit juice, scoop out the juice and pulp of 2 passionfruit and strain through a fine sieve. Press the back of the sieve with a spoon to squeeze out all of the juice. Set the juice aside and discard the squeezed seeds.
- Whisk the thickened cream until stiff and set aside.
- Whisk the cream cheese in a large mixing bowl with the icing mixture until smooth. Add the passionfruit juice, lime zest and juice, then fold in the whipped cream.
- Divide the biscuit crumbs into 4 small glasses. Top with the creamy passionfruit mixture and refrigerate until firm.
- To serve, cut the remaining 2 passionfruit in half and top each cheesecake cup with the juice and pulp of half a passionfruit.
Tip: Do not make these too far ahead, as you don’t want the biscuit crumbs to go soggy.
Optional: You can swap the icing mixture for brown sugar if preferred.
