How to make Quick Mini Cheesecake Parfait

Method:

  1. Make the base first. Mix the crushed biscuits with melted butter. Press into ramekins or serving glasses and chill for 15 minutes.
  2. To make the cheesecake filling, beat cream cheese until smooth. Mix in icing mixture and vanilla extract. Whip up thickened cream separately and then fold into cream cheese mixture. Spoon over biscuit base and chill for 2-4 hours. 
  3. Make the cherry compote. If using fresh cherries: cook cherries, sugar and lemon juice on medium heat for 5-7 minutes. Stir in cornflour mix until thickened. Cool. If using frozen cherries: cook cherries, sugar and lemon juice on medium heat for 10 minutes. Stir in cornflour and mix until thickened. Cool.
  4. To serve: top cheesecakes with cherry compote and a mint leaf then top with fresh cherries. Serve chilled.
