How to make Rockmelon Sorbet

Method

  1. Lay cubed rockmelon in a single layer, onto a flat baking sheet and sprinkle with sea salt. 
  2. Place the tray lying flat in the freezer overnight. 
  3. Remove the rockmelon from the freezer and let it sit at room temperature for about 10-15 minutes to thaw slightly. 
  4. Place the rockmelon and all the remaining ingredients in a blender and blend until smooth. 
  5. Add more water if needed, for the desired consistency. 
  6. Scoop and serve immediately. Place any remaining sorbet into a freezer-proof container until ready to use.

Tips: Start preparing this recipe a day ahead. Taste the sorbet before serving to see if you need to add any more salt or sweetness and adjust to taste accordingly. Before serving any leftover prepared sorbet, take it out of the freezer and let it sit at room temperature for about 10 minutes to thaw slightly before scooping and serving. 

Optional: For a non-dairy version, omit the whipping cream and replace with more water.
