How to make Tanghulu Grapes
Method
- Wash the grapes and dry thoroughly. Thread 9 skewers with 5 grapes each.
- Place sugar and 250ml of water into a small to medium-sized saucepan over a high heat (saucepan needs to allow the skewer to dip in and coat the grapes). Do not stir. Using a sugar thermometer bring the mixture to 135°C-140°C. This takes approximately 7 minutes.
- Meanwhile, fill a wide bowl with ice and water then set aside.
- Take sugar syrup off the heat and working quickly, gently dip the skewers into sugar syrup, making sure grapes are completely coated. Use a spoon to pour the syrup over the grapes if easier. Shake to drip dry then place into the iced water to chill completely.
- Remove from the iced water and serve.
Tip: The grapes must be as dry as possible before starting. Moisture on the grapes will stop the sugar from coating. Coat the grapes quickly so the sugar doesn’t harden.
Optional: Try strawberries, blueberries, kiwi fruit wedges or mandarin segments, instead of grapes.
