How to make Blueberry Summer Mocktail

Put the blueberries, lemon juice, ginger and honey into a small pan and cook on a low heat until the blueberries start to soften. Using a back of a wooden spoon, squash them until the juices start to flow. Cook for a few more minutes until the pulp is very soft.

Pour all the mixture through a metal sieve and squash the berries through the sieve with a spoon. Discard the skins.

Divide the blueberry juice between 4 tall glasses, then divide the mint between the glasses and, with the end of a wooden spoon, muddle the mint to release the flavour.

Add a handful of ice cubes to each glass. Top up the glasses with the sparkling water. Add some slices of lemon and lime.

Make a blueberry stirrer by adding several blueberries to a wooden kebab stick. Stir.

Add 2 mint leaves to each glass and serve immediately.
