Method
- Make your pineapple ice cubes at least 4 hours ahead or the evening before.
- Place the pineapple ice cubes, coconut water and a handful of mint leaves into a high-powered blender.
- Add ice cubes and blitz together until smooth and icy.
- Serve in 2 chilled glasses and garnish with the mint leaves.
Tip: To make frozen pineapple cubes, simply peel a fresh pineapple and cut the flesh into cubes. Place onto a flat tray and freeze until solid. Transfer frozen cubes to a large, snap-lock bag and keep in the freezer.
