How to make Spiced Ginger and Mango Crush
Method
- Place the mango into a small saucepan over a medium-low heat and add the chilli, sugar and ginger. Cook for 5 minutes or until the mango is completely soft. Set aside to cool.
- Once cool, add to a small blender or smoothie maker and pulse mango mixture until smooth.
- Place ½ cup of ice cubes into each of 4 highball glasses. Top with the mango purée. Top with ginger beer and serve with lime slices.
Optional: You can omit the jalapeño for a milder version.
Tip: To make this into a spicy cocktail, try adding dark rum.
