How to make White Peach and Cherry Bellini

Method

  1. Wash peaches and cherries. Remove the stones from the peaches and stems and stones from the cherries. Roughly chop the flesh. 
  2. Place in a small blender or smoothie maker with ¼ cup water and blitz to a smooth purée. Strain and chill.
  3. Divide the purée into 6 champagne flutes and top with cold, sparkling ginger beer. 
  4. Garnish with a fresh cherries or thin slices of white peach and serve.

Optional: For an alcoholic version, swap the ginger beer for prosecco, sparkling wine or Champagne.
