How to make White Peach and Cherry Bellini
Method
- Wash peaches and cherries. Remove the stones from the peaches and stems and stones from the cherries. Roughly chop the flesh.
- Place in a small blender or smoothie maker with ¼ cup water and blitz to a smooth purée. Strain and chill.
- Divide the purée into 6 champagne flutes and top with cold, sparkling ginger beer.
- Garnish with a fresh cherries or thin slices of white peach and serve.
Optional: For an alcoholic version, swap the ginger beer for prosecco, sparkling wine or Champagne.
