How to make Healthy Carrot Cake Muffins
Method
- Preheat oven to 180°C (160°C fan-forced). Line 12 baking cups with paper liners. Set aside.
- Combine flour, oats, baking powder, baking soda, cinnamon, nutmeg, ginger, salt and walnuts together in a large mixing bowl. Stir together until combined. Set aside.
- In a separate bowl, combine the eggs, sour cream, honey, olive oil, vanilla and carrots. Stir until combined.
- Add the wet ingredients to the dry ingredients, then stir until just combined.
- Into a 12-hole, small muffin tray, spoon the batter evenly. Bake for 15-18 minutes, or unti cooked through. Transfer the muffins to a cooling rack.
- While the muffins are cooling, make the icing. In a medium-sized bowl combine the milk and lemon juice with the icing mixture. Stir until it comes together to a drizzling consistency. Add more milk or icing sugar to adjust to the desired consistency.
- Once the muffins have cooled, use a small spoon dipped in the icing, to drizzle on the top of each muffin.
Optional: Substitute other nuts such as pecans or macadamias in place of walnuts.
