Avocado Bruschetta
How to make an Avocado Bruschetta

Ingredients

  • 1 punnet Bellino tomatoes, finely diced
  • ½ small red onion, finely diced
  • 2 tbsp fresh basil, chopped
  • 1 tbsp extra virgin olive oil
  • 1 ripe avocado
  • 1 clove fresh garlic, finely grated
  • Salt and pepper to taste
  • 1 tbsp Casa Barelli balsamic glaze, plus extra for drizzle  

Method

  1. Slice avocado in half and remove seed and skin, keeping flesh intact. Set aside.
  2. Combine all remaining ingredients in a bowl and mix well. 
  3. Spoon the bruschetta filling into each avocado half and drizzle with balsamic glaze. Enjoy!
