Ingredients
- 1 punnet Bellino tomatoes, finely diced
- ½ small red onion, finely diced
- 2 tbsp fresh basil, chopped
- 1 tbsp extra virgin olive oil
- 1 ripe avocado
- 1 clove fresh garlic, finely grated
- Salt and pepper to taste
- 1 tbsp Casa Barelli balsamic glaze, plus extra for drizzle
Method
- Slice avocado in half and remove seed and skin, keeping flesh intact. Set aside.
- Combine all remaining ingredients in a bowl and mix well.
- Spoon the bruschetta filling into each avocado half and drizzle with balsamic glaze. Enjoy!
