How to Make Easter Lolly Bark

Method 

  1. Line a 23 x 33cm baking tray with baking paper.
  2. Place 300g melted white choc melts in a bowl and tint with blue food colouring*.
  3. Place melted milk choc melts and additional 300g of white chocolate melts into separate bowls. You should have three colours of chocolate now: blue, white and brown. Pour spoons of each colour onto the prepared tray, allowing all three to touch.
  4. Working quickly, use a skewer to swirl the colours through. 
  5. Decorate by sprinkling with speckled mini eggs and mini marshmallows. Allow to set.
  6. Break into shards. Enjoy!

*Tip: You can make your own food colouring to tint the chocolate. You can use fresh or frozen berries, or for a stronger colour you can use red cabbage. Here's how - into a saucepan, add 1 cup water and approximately 1/4 red cabbage. Once brought to the boil, reduce heat and simmer for 15 - 20 minutes. Lift out the cabbage pieces from the water and add 1 teaspoon of baking powder to the purple liquid, to turn it blue. You'll need to boil the remaining liquid until it is reduced by half. If you need a deeper blue, reduce the liquid further for a deeper and more intense colour blue. Cool the liquid and use as food colouring.
