How to make Melon Ball Salad
Method
- Cut rockmelon in half and remove seeds. Using a melon balller, scoop out rockmelon balls and place them into a large mixing bowl.
- Add the drained bocconcini, olive oil and vinegar. Season well with salt and pepper and toss to coat.
- Slice the prosciutto in to halves, lengthways. Place slices onto a platter, gently gathering each slice to create some height.
- Spoon the melon and bocconcini on top, along with its dressing.
- Scatter with basil and/or mint leaves and serve.
Tip: If you don’t have a melon baller you can simply peel and cube the rockmelon into small, even-sized pieces.
