How to Make Broccolini and Noodle Stir Fry with Pickled Carrot
Method
- Combine vinegar, sugar and ¼ cup boiling water in a small bowl. Stir until the sugar dissolves. Add the julienned carrot and stir to combine. Set aside to ‘pickle’ while you cook the stir fry.
- Crack the eggs into a medium-sized bowl. Lightly beat with a fork and season with salt and pepper. Heat 2 teaspoons of oil and 10g butter in a non-stick frying pan over a medium-low heat until the butter has melted and is foaming.
- Pour the eggs into the pan, tilt the pan slightly from one side to another to allow the eggs to swirl and cover the surface of the pan. Cook the for 2-3 minutes or until set. Remove from pan and cut into strips.
- Add the remaining oil to the pan. Add the red onion and cook over medium heat until soft. Add the garlic and ginger and cook for 1 minute or until fragrant. Add the broccolini and cook, tossing for 2-3 minutes or until tender. Add a couple of tablespoons of water to the pan which will help with the cooking. The water steams the broccolini as it stir fries. Add the noodles, soy sauce, honey and cook for another 1-2 minutes or until the noodles are hot.
- Stir through the shredded omelette. Place on 4 warm plates.
- Drain the pickled carrot and place on top. Garnish with toasted sesame seeds.
Tip: To toast sesame seeds, dry 2 teaspoons of sesame seeds in a small pan over medium heat for 2-3 minutes, continually moving around the pan until lightly golden.
